Known in Italy as 'sugo alla norma', Norma sauce was named after Vincenzo's Bellini's opera Norma, when Italian writer Nino Martoglio declared it as much of a masterpiece as Bellini's epic.

The extra-virgin olive oil chosen is the multi-award-winning Frantoi Cutrera, from olive groves farmed by six generations of the Cutrera family in southeastern Sicily.
